Farro Salad with Feta Cheese (Mediterranean Style)
Mediterranean style fresh salad with Farro, feta cheese and olive oil. The perfect light and satisfying salad - can be enjoyed on its own or as addition to another meal.
Farro, Grains, Salad
of choice (arugula or lettuce mix)
feta cheese, cut in cubes
Green / Black olives
radish heads, chopped in circles
How to prepare Farro Grains
In a non-stick pan with lid (

), place farro grains, water and bouillon cube, bring to a boil on your stove top, then let simmer until cooked (usually around 30 min on my stove).
Once cooked, drain water and set aside. Or let cool, then put in air-tight container and store in fridge for up to 3 days or use immediately.
How to prepare Salad with Farro
Wash vegetables and green salad (arugula or lettuce mix) under cold water. Peel as needed.
On a wooden board of choice (
I love this one: tomato sauce never ends up on the counter, instead in my salad plate)
, cut cucumber, tomato, radishes (optional) and feta cheese in cubes.
Combine all ingredients in salad plate of choice, drizzle with olive oil, add cooked farro grains and enjoy.
