One Bowl Spelt Pancakes (4 Ingredients)
Healthy one bowl spelt pancakes that require only 4 ingredients to whip. Perfect with honey, maple syrup, marmalade or even Feta Cheese as breakfast or brunch. Ideal for kids.

Servings: 12 pancakes
- 1 cup spelt flour whole grains
- 1 cup whole cow’s milk
- 1 egg medium
- 1 tsp baking powder
- 1 tbsp butter (or olive oil) for greasing the pan
- 1 tsp baking soda optional
- 1 tbsp brown sugar unrefined (optional)
In large mixing bowl add eggs (sugar if desired) and milk and stir well to combine.
In a separate bowl combine spelt flour, baking powder (and baking soda if desired) and mix well. Then add to liquid ingredients and stir until just combined (I use egg whisk or mixer whisk).
Preheat skillet / pan on high heat and grease gently with butter (olive oil) with wooden spatula. Once well heated, reduce heat to medium. Then, add batter (1/4 cup at a time or use small ladle) to the pan by giving the pancake room to spread.
Flip pancake over once it puffs up bubbling and gets slightly dry on the edges (but still liquid-y in the middle – approx. 2 min on my stove. Cook on the other side until golden brown (approx. 2 min on my stove).
Continue until all batter is cooked. Serve immediately with desired topping (or plain as my 2 year old prefers them).
